Japanese Wagyu raised in Japan and prepared under continuous rabbinical supervision — shechita, bedika, nikkur, and melichah — so that it may be eaten by those who keep kosher. Because that supervision has to take place in Japan, at the point of slaughter and processing, it has effectively never been available to the kosher market at scale.
American Wagyu is Japanese genetics crossed with Angus or Holstein cattle, raised in the United States and graded on the USDA scale. Japanese Wagyu comes from purebred Japanese cattle raised in Japan and is graded by the Japan Meat Grading Association — the only body that can award the A5 grade. Both are sold as Wagyu, but they are different products.
